  • I think that next week-- I'm going EXTREME.

    I'm looking for vegetarian, or flexitarian menu options. Mostly vegetarian... I think it might be a good detox for my body.

    Any suggestions?

  • Day 06 (and some catching up on dinners)

    Day 06 - A picture of a person you'd love to trade places with for a day.

    It's just ONE day after all. I don't think I could keep up with her hectic schedule, but it's sure be fun to be in her shoes for a day. :)

     

    Moving on:

    Tonight I made quiche with bacon, spinach, peppers, and onions. Served it up with some hash browns an the meal was complete. I thought the little dishes would be great for serving just one, but it ended up being way too much.

    I also purchased a Cinnamon Chip Coffee Cake at the grocery store... discounted and still heavenly. It was probably the best part of the meal and only slightly off plan. :)

     

    Last week I made Pork Cutlets with Brown Butter Gnocchi (compliments of Rachael Ray's mag)

    Yes, something that's breaded and pan fried (although not deep fried) can be healthier!

    And finally, spinach and mozzarella stuffed chicken breast with a Parmesan breading with Alfredo spaghetti squash. (Yes, the white stuff oozing out of the chicken breast is fresh mozzarella. I realize that it doesn't look particularly appetizing, but it was delicious.)

    The best part of it all- you can eat things like this AND lose weight!!! Life is good!

    Day 04 - A picture of your night.  (It's not quite my night- as I didn't do anything, so this is just a picture from my day-- we went shopping and this was one of the MANY farms driven past to get there.)
